Coconut Shrimp with Spicy Grand Marnier Raspberry Sauce
Spicy Grand Marnier Raspberry Sauce:
1.Mix the above ingredients together in a small mixing bowl until the consistency is even. Chill for 20 minutes prior to serving.
1. In a large bowl, mix the coconut and panko bread crumbs together and and salt and pepper. In two separate bowls, place the flour and bread crumb mixture. In a third bowl whisk the eggs.
2. Rinse shrimp and pat dry with paper towel and then place and dredge each shrimp in the flour and coat evenly. Shake off excess flour then dip shrimp in the egg, holding each shrimp for a few seconds above the bowl to let excess egg drip.
3. Next, coat the shrimp evenly with the bread crumbs. Place the shrimp on a plate until you’re ready to fry. If using a deep fryer, preheat to 350F. Fry for about four minutes until golden brown. Set the fried shrimp on paper towels for one to two minutes to drain off excess grease.
4. Serve hot with the Spicy Grand Marnier Raspberry Sauce.
