I’m Bahamian and I’ve never tried the American macaroni and I don’t plan to either. That’s just how we make our macaroni in The Bahamas and pretty much the whole West Indies. It’s just too much sauce for macaroni.

That right there is disgusting.

The one black Americans make probably taste good it’s just the texture. I’ve seen some very soup like macaroni. Those look good though.

People like those two women in the video are so annoying. People who act like they are the only one that can make a dish and everyone else's version is "doing it wrong" are truly annoying. I appreciate the one woman from Long Island who was willing to give each dish a fair chance.

I don't like how some black folks across the diaspora shade African American soul food.

Some of you are so quick to rush in here and say you would never try our soul food dishes.

Bahamian-style macaroni and cheese pie is a decent alternative if you can't get Black American-style southern baked macaroni and cheese. The Bahamian style is more stiff and isn't as cheesy, flavorful and rich.

They did not single out AA food and AA food is not seen as separate from American food. I thought y’all called it Soul Food because the AA version of American food likely tastes more flavorful and would be more appealing to other black people. In all my years living here, every potluck at work, Americans white and black always bring stove top macaroni cheese which is why they compare it to Kraft dinners.

I add lots to my baked macaroni and make it like a one stop meal - thyme to season, paprika on top for colour, green bell peppers, bacon cubes or ham bits (whichever I can find) and three types of cheeses. Yum yum. ... my husband says it like a "Junkanoo macaroni". lol.

Yeah I can appreciate american macaroni when its baked and made with good cheese, like gouda. But I cant stand when its too sharp and one-note.

What these aunties were cooking is what some refer to as “macaroni pie.”

Haitians use Ziti noodles too, as well as carnation milk and peppers. And its not dry and compact. That is my favorite to honest.

I have tried soul food and from the little I had( that's fried chicken, macaroni, sweet potato pie) I have to say it tasted amazing, especially the macaroni.

Most ppl who say that probably are not exposed to that kind of food and rather stick to what they know. I think they are missing out.

It's called Macaroni no pie. Thanks.

My mom does the same. Much more flavourful!

This reminds me of my late grandmother. She made the best macaroni and cheese. I haven't had macaroni and cheese like this since she died.
Damn, and she died before I even knew what I was missing :emoji_cry: This too makes me sad. Hopefully she passed down the recipe to someone in your family and they've been practicing.

But most Americans bake their Mac n cheese. Clearly whoever gave her the soup can't cook,

Most BLACK Americans bake their macaroni and cheese. I was a judge at a cook-off at an old job (I am crazy, I know) and only one white person made baked Mac n cheese, and I’m pretty sure it was a stouffers. The rest was made on the stove...and nasty

No cap but yall food is kinda bland compared to ours still way better than white peoples food though.I worked in 2 soul food restaurants and tasted many dishs and can say yall dont use as much seasonings as us. But there are some AA's that do like people from Louisiana,Texas and newer some generations of AA I see that are using some of the seasonings like we do to make traditional AA dishes down in Florida.

I never knew baked macaroni and cheese was a staple in Caribbean households.

Maybe not in Caribbean households but definitely in The Bahamas. Bahamians only ever eat baked macaroni - especially if you get a meal of baked meat (pork chops or chicken), baked macaroni, peas and rice (Pigeon peas with browning in the long grain rice), potato salad, cole slaw and fried plantain. Yum yum.

What soul food restaurants and in what region/state? Because AA's cook food according to the region. Black folks in South Carolina cook a whole nother menu compared to Black folks in Louisiana. Black folks in Memphis cook dishes that are not made elsewhere. AA food is more varied compared to Haitian food due to the vast geography of the US. You have not tasted all African American cooking.

Same thing as Caribbean households then lol because we eat all those sides with our main dishes and bake mac and cheese is a must.

Bahamas is no different in that sense.

My family is Bahamian & Southern. As a kid I hated when the Bahamian fam made macaroni. It has vegetables, y'all! VEGETABLES!

Last Thanksgiving my cousin's Haitian wife tricked us. It looked good & cheesy but then you taste the veggies & HAM!

She's been in this family for 6yrs. She knows how we feel about mac & cheese.

TBH I’m not a fan of Bahamian food. Konch and rice and peas and the fish. Not enough flavor for me. I need butter and cheese and cream and seasoning salt on my food.
