Trying to get back into the keto swing of things.

Do any of you have any ideas/recipes/foods that you enjoy for breakfast?

I’m already tired of spinach and mushroom egg scrambles.

You can include brunch-ish items as well too.

Thanks!

I like to make an “oatmeal”. Mix hemp seeds (3 tbsps in a normal serving but I use 6), chia seeds (1tbsp), and flax seeds (1/2 -1 tbsp) with some cinnamon, vanilla extract, stevia (or whatever sugar substitute you like) to taste and add about 4oz. of liquid (I use Ripple protein milk or unsweetened almond milk). Microwave for like 90 seconds and then depending on your calories, you can add 1/2 tbsp of almond butter on top.

This also works as overnight oats, but I don’t like overnight oats. It’s super filling and pretty high in fat and protein.

Where do you get your seeds from?

Publix (that’s a supermarket) but Trader Joe’s carries all of them, as does Whole Foods and I want to say Target as well but I am not completely sure.

ETA: smh. I am just now realizing that I didn't hit the reply button. I’m sorry OP lol—I’m glad you got my response.

Egg muffins. They’re so easy.

Basically scramble eggs and bake it in muffin tray. You can add all sorts of ingredients to it. I usually do spinach tomatoes, cheese, breakfast sausage, onions. Bake them at 350 until they are a little golden brown on top.

I eat them throughout the week. Sometimes I’ll do half the tray one way, and do a different combination in the other half.

They reheat and freeze well, too.

I made a Chaffle breakfast sandwich on Sunday. I had eggs, sausage and cheese on two chaffles. I was full all day.

ETA chaffles are eggs, mozzarella & almond flour mixed into batter and cooked on a mini waffle maker.

I get these at Costco, you get 8 (4 - 2 packs) for $9, which is a good deal, they're so good.

pretty basic, but if youre low on time running out the door, you could boil a dozen eggs and keep them in the fridge for up to a week! That way you have something you can just eat and go with.

I know of some people who make egg muffins. All you do is put together whatever mix you want. Eggs, bacon, mushrooms, spinach, ect ect and then you put the mixture in muffin tin and bake it until done. Then you place the egg muffins in the freezer and heat up on your way out.

chia seed pudding made with coconut milk. I get frozen raspberries and heat them on a skillet so that when they are warm it turns into something resembling a compote. Also aa a dollop of almond butter on top.

You can use lilys chocolate, it is sweetened with stevia. I buy a bag of chocolate chips at whole foods for $6. It's pretty good.

ugh too bad I can’t stand yogurt. I’ve been looking for a medium to hold all of my favorite fruits and nuts at one time

I make a lot of egg related recipes for breakfast or a hash (minus the potatoes) with eggs, meat, leafy green veggie + avocado. Next favorite is keto pancakes.

This is usually my go to as well. I’m tired of egg/bacon/spinach/mushroom/scrambles *le sigh*

Oh! Then try making some cauliflower cheese biscuits. So yummy with everything. Lots of recipes on google. I'll eat 1-2 for breakfast with some bacon or eat them with a steak for dinner.

Back when I was really in shape, I’d have a smoothie consisting of bananas and a vanilla protein mix with a bowl of oatmeal on the side. I don’t eat breakfast much anymore, which is probably the reason I overeat later in the day. I’m trying to get back in shape and threads like this help, thanks OP for posting this.

ETA: sorry I misread the title. This isn’t exactly a breakfast for a low-carb diet lol.

Have you checked out Dr.Davinah’s website? She has recipes for all things keto, including pancakes and waffles. I’m not doing low carb yet but I’ve heard nothing but great things about her and Chef resha.

I’ve also seen people eat low carb cheesecake and cheesecake parfaits for breakfast.

Why a thumbs down? That’s is low carb as you can get for breakfast

Because if you took the 30 seconds to actually read my post, I said I’m tired of bacon/eggs etc.

Everyone in here actually read my post and has given creative ideas, but you think you’re LSA’s resident keto expert and just immediately answered off of the title like we’re all newbies to this.

Yes! I’ve made mini cheesecakes for a dessert treat but have definitely eaten them for breakfast lol.

Was this for me? I’ve never tried Dr. Davinah’s recipes but I did make my own recipe and it’s amazing, if I do say so myself haha. Cheesecake is probably the one thing I find tastes exactly the same ketofied.

Mine is 1/2 cup almond flour, 1/4 coconut flour, 3tbsp butter or coconut oil, a little bit of Swerve, and a pinch of salt to make the crust. Then I mix 8oz of cream cheese, 1/2 tbsp of butter or coconut oil (melted), 1 egg, Swerve to taste (I wouldn’t do more than 1/2 cup but I don’t like it TOO sweet), vanilla extract, a pinch of salt, and a splash or two of almond milk. Then I just see how many little mini cupcakes it makes. Bake at 350 for like 20 min or so— I check til they look puffed up and are kind of jiggly but solid. It usually comes out to 1.5 net carbs per mini cheesecake.

You can play around with flavorings and toppings and stuff like that. Coconut extract and coconut milk are bomb. Vanilla topped with some sugar free strawberry jelly is good too.
